Young Hijiki Udon Noodles

The crunchy texture of Young Hijiki is very useful. It is a Young Hijiki Udon that warms the mind and body.

Ingredients (2 servings):
- Young Hijiki : 3g
- Inari Age (Seasoned deep-fried tofu pouch): 4-6 sheets
- Frozen Udon (or boiled udon): 2 portion
- Green onions: 3 stalks
Udon Soup
- Water: 600ml
- Bonito flakes: 15g
- Dried anchovy powder: 1/2 tsp
- Salt: 1 tsp
- Mirin: 2 tbsp
- Soy sauce: 1 tbs
How to:
- Soak Young Hijiki for 6 minutes to rehydrate.
- Cut each stalks of green onion into 4cm lengths.
- Prepare the Udon soup. Add all the ingredients to a pot and bring to a boil over medium heat. Once it reaches a boil, turn off the heat and strain the broth. Return the strained broth to the pot, add 4cm pieces of green onions, and simmer briefly.
- Heat the Udon noodles in the microwave and place them in a srving bowl. Pour the broth over the noodles, then top with the Inari Age and the finely sliced green onion.
- Finish by placing rehydrated Young Hijiki on top.
