Made with domestically grown wheat flour kneaded with care and achieving a fresh noodle-like texture through a special drying process, Kikunoi's Nyumen is truly exceptional. This time, it’s a special collaboration between these extraordinary nyumen noodles and Sea Vegetable's "seaweed."

日本の海域に生息する海藻は約1,500種類。その全てが毒を持たず、食用になり得るとされていますが、その可能性はまだまだ未開拓。私たちシーベジタブルは、これらの海藻を陸上や海面で栽培しながら、食材としての可能性を見出し、食文化を守りつないでいく取り組みをしています。

今回「潮の香にゅうめん」に入れた海藻は、各地で古くから親しまれてきた三種。

海藻の中でも一際目立つ、繊細でさわやかな香りが特徴の「すじ青のり」。ほかの海藻にはない、山菜のような独特な苦味と青っぽい香りを持つ「はばのり」。外はコリッ、中はジュルッとした二層の食感がたまらない「みりん」。
