Originally from Sydney, he won an U30 cooking contest in Australia, and was in charge of food development as sous chef at INUA, which earned two Michelin stars just one year after opening in Tokyo in 2018. After that, he encountered sea vegetables, and while diving into the ocean to research them, he wanted to bring out the appeal of seaweed from an edible perspective, so he joined the team.



To date, he has worked with over 100 types of seaweed in his company's test kitchen, and has been promoting the potential of seaweed as an ingredient, which is unknown even in the culinary industry. Together with Uchida, a leading researcher in seaweed and fermentation research, who he welcomed into the company, he is also working on seaweed fermentation research on a daily basis.

Very unique among seaweeds

I met everyone at Sea Vegetables around November 2020. I remember them bringing dried suji aonori seaweed to the kitchen.

When I first tried it, I thought it was fresh and freshly made. The dried green laver I had eaten before was not bad at all, but I didn't know when it was processed or how long it had been on the store shelf. But I still remember thinking that the Sea Vegetable one was freshly dried.

Also, the smell of the seashore was subdued, giving it a refreshing scent. I thought it had the pure scent of green laver.

Raw suji aonori is nothing if you don't put in a little extra effort. Whether it tastes good or not depends a lot on the knowledge and skill of the person who uses it.

One dish I think is absolutely delicious is risotto. It's absolutely delicious to mix it in at the end and then put it on top after serving the dish.
