This fall, a special event titled "EAT & MEET SEA VEGETABLE" will be held at Mitsukoshi and Isetan. During the event, a variety of exciting products, specially developed by various stores for this occasion, will be on display. Of course, Sea Vegetable will also have a dedicated booth, where we will share the wonders and deliciousness of seaweed with you. "Seaweed and Seasonal Fish Ramen"
We're excited to announce the return of the "Seaweed and Seasonal Fish Ramen," created by our partner chef Daisuke Okada, a renowned sushi artist and seaweed cuisine researcher. Seaweed pairs perfectly with soups and broths, and this dish highlights the best of those qualities. Enjoy a variety of seaweeds, each offering unique flavors, aromas, and textures that evolve with the temperature of the dish. This colorful creation will provide you with a multi-sensory experience that’s not only delicious but visually stunning as well!
\The Key to the Perfect Broth Flavor/
The broth of the "Seaweed and Seasonal Fish Ramen" is infused with the meticulous attention to detail of sushi artist and seaweed cuisine expert, Chef Daisuke Okada. The base of the broth is made from fish scraps and heads that are so fresh they could be served as sashimi. These are roasted and combined with kombu (kelp) and green onions, creating a rich, umami-packed foundation.
To perfect the flavor with soy sauce and salt, Okada uses Re-seaweed's "Aonori Soy Sauce"—a unique product made by fermenting fresh Suji-Aonori. This soy sauce offers a delicate balance of Suji-Aonori's subtle aroma and the natural sweetness from rice koji, resulting in a light yet deeply flavorful broth. The "Aonori Soy Sauce" adds depth and harmony to the entire dish, elevating the taste to a whole new level.

About Daisuke Okada
Born in 1979 / Sushi artisan and Sushi chef,
At the age of 18, he embarked on a journey into the world of food, dedicating himself to mastering the art of sushi. By the age of 24, he had gained enough experience and expertise to venture into independent sushi craftsmanship.
He has authored books such as おすしやさんにいらっしゃい!Welcome to the Sushi Shop! published by Iwasaki Shoten and 季節のおうち寿司 Seasonal Home Sushi published by PHP Institute, showcasing his knowledge and passion for sushi cuisine.
