Habanori Pasta with Chicken and tomato

Ingredients (for 2 people):

  • Dried Habanori
  • Garlic (minced)...1 clove
  • Olive oil (for sautéing)... 3 tablespoons
  • Chicken thigh meat...200g
  • Tomatoes.... 200g (2 pieces)
  • Onion.... 1/4 piece
  • Spaghetti ....180g
  • Olive oil (for finishing)... 2 tablespoons
  • Salt (for pasta water / seasoning)
  • Black pepper or sliced ​​red chili peppers

 

How to:

  1. ◎ Lightly toasting the Habanori seaweed will give it a beautiful green color. (You can toast it in a toaster at 200 degrees Celsius for about 20 seconds or heat it in a frying pan.)

  2. [Preparation] Trim excess fat and tendons from the chicken thigh meat and cut into 3cm pieces. Cut the tomatoes in half and then into eighths. Slice the onion into wedges.
  3. Heat olive oil in a frying pan over medium heat, then add the onion and sprinkle lightly with salt. Once softened, add the chicken thigh meat.
  4. Season the chicken with salt and cook over medium heat. After about 3 minutes, reduce the heat to low and add the minced garlic to the edge of the pan to heat.
  5. Start cooking the pasta at this point. Once the garlic is lightly browned, add the tomatoes and simmer over high heat to reduce slightly. The tomato juices will form the sauce.
  6. Taste the sauce and adjust the seasoning with salt if necessary. If the sauce thickens too much, add some pasta cooking water to maintain a desired consistency.
  7. When the pasta is almost al dente, about 30 seconds before the specified cooking time, drain lightly and transfer to the frying pan. Increase the heat to high, drizzle with olive oil, and toss the pan.
  8. Once the sauce and oil have coated the pasta evenly, transfer to a serving plate while still hot and generously sprinkle with Habanori. Add black pepper or sliced red chili peppers according to your preference.

Transform your fridge staples of chicken, tomatoes, and onions into a quick and easy pasta dish. The addition of Habanori adds a delightful nuttiness, elevating the dish to a sophisticated flavor profile.

  • You can use Japanese leeks instead of onions for extra flavor.
  • Mini tomatoes work well as a substitute for regular tomatoes. For an extra richness, consider adding butter, which pairs perfectly with Habanori.
