Sesame horse mackerel with Mirin

Did you know that "Sesame Mackerel" is delicious with horse mackerel too? Just add Sea Vegetable's "Mirin Seaweed" to it for a unique and textured original snack!

Ingredients (Makes about 2 small bowls):
- Salted or Dried Mirin (before desalting/rehydrating): 50g/7g
- Mackerel: 1 fillet (about 90g-100g after deboning)
- For the Marinade (A):
- Sake: 1 teaspoon
- Sugar: 2 teaspoons
- Soy sauce: 2 teaspoons
- Mirin: 1 tablespoon
- Grated ginger juice: 1/2 teaspoon
- White sesame seeds (ground): 2 teaspoons
- Scallions (finely chopped): about 2 tablespoons
- White toasted sesame seeds: as needed (optional)
How to:
- Rinse the Salted Mirin twice, then soak it in fresh water for 8-10 minutes to desalt it. Drain well in a sieve, then pat dry with paper towels. If you're using Dried Mirin, soak it in plenty of water for about 8 minutes.
- If using pre-prepared mackerel, remove the backbone with tweezers. Peel off the skin, then cut into 1cm-wide strips. Marinate in the marinade (A) for about 1 hour.

Remove the guts and head with a knife, then clean thoroughly and fillet into 3 pieces. - Remove the backbone with a knife and debone with tweezers. Follow the same marinating process as step 2.
- After marinating, mix the mackerel with the Mirin and the chopped scallions, then serve in a dish. You can also sprinkle toasted sesame seeds on top if you wish!
