Shime Saba with Mirin & Hijiki Salad

Ingredients:
- Salted or dried mirin: as desired
- Salted or dried hijiki: as desired
- Shime saba (marinated mackerel)
- Arugula
Instructions:
- For salted fresh mirin: Rinse in a bowl, changing the water twice, then soak in fresh water for 9-10 minutes. Drain and pat dry.
- For dried mirin: Soak in water for 8 minutes, then drain well.
- For salted young hijiki: Rinse in a bowl, changing the water twice, then soak in fresh water for 3 minutes.
- For dried hijiki: Soak in water for 6 minutes.
- Wash the arugula and place it on a plate.
- Top with hijiki and mirin, then add the shime saba to finish.
Shime saba, a perfect food with its balanced fat content, is seasoned with salt and vinegar, making it almost a dressing itself. Though it lacks spices, its structure is akin to that of a delicious dressing.
