Shime Saba with Mirin & Hijiki Salad

Ingredients:

  • Salted or dried mirin: as desired
  • Salted or dried hijiki: as desired
  • Shime saba (marinated mackerel)
  • Arugula

Instructions:

  1. For salted fresh mirin: Rinse in a bowl, changing the water twice, then soak in fresh water for 9-10 minutes. Drain and pat dry.
  2. For dried mirin: Soak in water for 8 minutes, then drain well.
  3. For salted young hijiki: Rinse in a bowl, changing the water twice, then soak in fresh water for 3 minutes.
  4. For dried hijiki: Soak in water for 6 minutes.
