Mozuku Ankake

Create a heartwarming dish by simply adding mozuku to your favorite Ankake sauce.

Ingredients:

  • Sticky Mozuku: 50g
  • Cooked rice: 1 bowl
  • Chinese chives (Nira): 90g
  • Eggs: 3
  • Soy sauce: 1 tsp
  • Chicken broth powder: 1/2 tsp
  • Water: 1 tbsp
  • Sesame oil: 1 tbsp

Sweet and Sour Sauce (A):

  • Vinegar: 2 tbsp
  • Light brown sugar: 4 tbsp
  • Soy sauce: 2 tbsp
  • Water: 2 tbsp
  • Cornstarch mixed with water: 2 tbsp

     

    How to:

    1. Place a serving of cooked rice into a deep bowl.

    2. Wash and drain the chives, then finely chop them on a cutting board.
    3. Heat sesame oil in a frying pan over medium heat. Add the chopped chives and lightly stir-fry.
    4. Add eggs, soy sauce, chicken broth powder, and water, then scramble the mixture until the eggs start to set.
    5. Once cooked, transfer the egg and chive mixture on top of the rice in the bowl.
    6. Make the Sweet and Sour Sauce: In the same frying pan, combine vinegar, light brown sugar, and soy sauce. Bring to a gentle boil. Add the cornstarch mixture to thicken the sauce.

    7. Quickly mix in the Mozuku to the sauce to avoid overcooking it.
    8. Pour the sauce and Mozuku mixture over the rice and egg chive mixture.
