Mozuku Ankake

Create a heartwarming dish by simply adding mozuku to your favorite Ankake sauce.

Ingredients:
- Sticky Mozuku: 50g
- Cooked rice: 1 bowl
- Chinese chives (Nira): 90g
- Eggs: 3
- Soy sauce: 1 tsp
- Chicken broth powder: 1/2 tsp
- Water: 1 tbsp
- Sesame oil: 1 tbsp
Sweet and Sour Sauce (A):
- Vinegar: 2 tbsp
- Light brown sugar: 4 tbsp
- Soy sauce: 2 tbsp
- Water: 2 tbsp
- Cornstarch mixed with water: 2 tbsp
How to:

Place a serving of cooked rice into a deep bowl.
- Wash and drain the chives, then finely chop them on a cutting board.
- Heat sesame oil in a frying pan over medium heat. Add the chopped chives and lightly stir-fry.
- Add eggs, soy sauce, chicken broth powder, and water, then scramble the mixture until the eggs start to set.
- Once cooked, transfer the egg and chive mixture on top of the rice in the bowl.

Make the Sweet and Sour Sauce: In the same frying pan, combine vinegar, light brown sugar, and soy sauce. Bring to a gentle boil. Add the cornstarch mixture to thicken the sauce.
- Quickly mix in the Mozuku to the sauce to avoid overcooking it.
- Pour the sauce and Mozuku mixture over the rice and egg chive mixture.
