Hijiki with Cod Roe and Carrot Mix

Try adding Yuzu Hijiki to the classic cod roe and carrot mix! A perfect dish for steaming hot rice or even mixed into onigiri!

Ingredients ( 3 to 4 cups of bowls):

 

  • Dried young hijiki: 7g (will expand to about 2-3 times after soaking)
    • Or, Salted hijiki: 40g (before desalting)
  • Cod roe (remove the skin): 40g
  • Carrot (finely chopped): 70g
  • Sesame oil: 1 tsp

    How to:

    1. Rinse the young hijiki a couple of times, then soak in water for about 5 minutes to desalt it after rinsing off the salt. For Dried Hijiki, soak it in water for 6 minutes.
    2. In a deep frying pan, heat the sesame oil over low heat. Add the chopped carrots and sauté for about 2 minutes.
    3. Add the cod roe and cook until it turns white.
    4. Add the prepared hijiki to the pan, mix well, and remove from heat.
    5. Serve this delicious mix over freshly cooked rice or use it as a filling for onigiri. Enjoy!
