Hijiki with Cod Roe and Carrot Mix

Try adding Yuzu Hijiki to the classic cod roe and carrot mix! A perfect dish for steaming hot rice or even mixed into onigiri!

Ingredients ( 3 to 4 cups of bowls):
- Or, Salted hijiki: 40g (before desalting)
How to:
- Rinse the young hijiki a couple of times, then soak in water for about 5 minutes to desalt it after rinsing off the salt. For Dried Hijiki, soak it in water for 6 minutes.
- In a deep frying pan, heat the sesame oil over low heat. Add the chopped carrots and sauté for about 2 minutes.
- Add the cod roe and cook until it turns white.
- Add the prepared hijiki to the pan, mix well, and remove from heat.

Serve this delicious mix over freshly cooked rice or use it as a filling for onigiri. Enjoy!
